You may want to make this Tomato Salsa in larger quantities so you can enjoy it with your meals many days in a row.

Ingredients:

  • 4-5 medium-sized tomatoes, finely chopped
  • 1/2 red onion, finely chopped
  • 3 tbsp lime juice
  • 1 small garlic clove, finely minced
  • 1/2 serrano chili or jalapeno, finely minced
  • 1/3 cup chopped fresh cilantro
  • Sea salt (optional)
  • 1/2 tsp ground cumin (optional)

Directions:

Combine all the ingredients to a medium-sized bowl and mix well. Serve immediately or refrigerate until needed.

Ketchup

Ingredients:

  • 6 oz tomato paste
  • 1/3 cup apple juice
  • 2 tbsp lemon juice
  • 2 tsp raw honey
  • 1/4 tsp dried onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp dried oregano
  • Pinch of cayenne pepper or chili flakes (optional)
  • Sea salt to taste (optional)

Directions:

Blend or whisk the ketchup ingredients together until smooth. Taste and adjust seasonings as desired.
